Humble Roots Beer Project
Fairbanks
The feel
Humble Roots is a craft brewery and taproom in downtown Fairbanks, by the river, with rotating taps and a chill neighborhood feel. The beers lean toward hop-forward styles, fruited sours and confection-inspired stouts.
It reads as a modern taproom, and it is a regular stop for brewery tours around Fairbanks, including the evening Arctic Ale Trail tour, which can end here. A small-group tour that also covers Latitude 65, HooDoo and Silver Gulch drops guests off at the taproom too.

Getting there
- Website
- humblerootsbrew.com
- Hours
- Mon-Sat noon-10pm, Sun 1-6pm, posted on the venue's own site as its 'summer hours' and matching the CSV extract exactly. The same page also posts different 'regular hours' (Mon-Tue noon-8:30pm, Wed-Sat noon-10pm, Sun 1-6pm) with no date range attached to either label, so which set applies in early September is not certain. The summer-matching set is used here because two independent sources (CSV + official site) agree on it; call ahead if visiting on a Mon or Tue evening.
